There’s nothing like a little history with your food to put everything into tasty context. So it was recently when the ladies of Bertozzi Importing hosted a night dedicated to the nuanced wonders of Acetaia Giusti- makers of fine balsamic vinegars out of Modena, Italy since 1605.
A Guided Taste Test
Guiding guests through the various vinegars and their distinct characteristics was a 17th generation decendant of the Giusti founder, Claudio Stefani. Stefani has every reason to be proud to represent the Giusti line of vinegars- his family is credited with having first recorded the balsamic vinegar recipe in history!
